Zesty Lime
Quinoa Salad

1 c. quinoa
1 c. sliced grapes
½ c. diced celery
1 green onion, thinly sliced
¼ c. sliced almonds
¼ c. chopped cilantro
Zesty Lime Dressing:
¼ c. extra-virgin olive oil
1 t. lime zest
3 T. lime juice
1 t. maple syrup
½ t. sea salt
¼ t. black pepper
How to Prepare
Prepare quinoa according to package directions, except use only 1 ¾ c. water. (Using less water will result in a fluffier quinoa.) Allow to cool 10-15 minutes.
Whisk together dressing ingredients in small bowl and set aside.
Combine quinoa with grapes, celery, green onion, cilantro in medium bowl. Mix in dressing and combine. Add almonds just before serving. Can be served warm or cold but best at room temp.
Serves 4.
